LBTL 2015 – Day 2

I woke this morning with a truly awful headache, pounding.  I still have it.  I feel tired, am a little irritable and I can feel my concentration drifting after just a few minutes.  I expected it to be slightly harder this time as I am taking the challenge straight after doing a show which means I am already tired and run down. On top of all of that I have the cold that was doing the rounds with the cast last week so I feel dreadful!  BUT, the reality is that no matter how rubbish I feel right now, on Friday things will change.  For millions of people around the world that won’t be the case, and that is the reason why I am doing this, why I am currently hungry and grumpy!  I have chosen to support the Send a Cow charity, please sponsor me by following this link and giving whatever you can: 

My dinner last night was simple but hearty, rice and dhal is filling and tasty and it provided the culinary hug I was craving!  I like to mix mine together so all the rice is coated in lovely lentils.

250g red lentils
1 onion finely chopped
3 cloves garlic chopped
good sprinkle of cumin
2g turmeric
Sprinkling of red chilli flakes
2 tsp tomato puree
splash olive oil
creamed coconut block
good pinch of salt
1 pint water (approx), might be a bit more

Heat the oil over a medium heat the add the onions and garlic and soften. Once softened add the chilli flakes, cumin, turmeric,tomato puree and salt and cook for around 30 seconds. Then add the lentils, water and coconut cream and simmer until the lentils are cooked (around 25 minutes). You might have to add more water as the lentils soak up a lot of liquid and you don’t want it to burn in the pan. You want a thickish consistency – like porridge.  Eat with boiled rice.
