Live below the line – Day Two!

Ahhh the joy and comfort of pasta! No really, dinner tonight was pasta with jazzed up shop bought value pasta sauce (recipe below) and it was so comforting and nice that I have a big pasta smile on my face right now! Lunch was soup again, with chapatti’s. Nice and filling during my limited lunch break as work was crazy busy.

Pasta and sauce

Penne (as much as you like cooked in boiling water until al dente) ad stir through knob of butter
Jar value pasta sauce
1/2 a large courgette (or 1 whole small one), chopped into small chunks
finely chopped onion
2 cloves garlic crushed
1 small carrot chopped in to small chunks
sprinkle of oregano
sprinkle of cumin
2 good squirts tomato puree
splash olive oil

Heat the oil and add onions, garlic, courgette and carrot and sautee for about 1 minute. Add the jar of sauce, and half the jar again of water, tomato puree, spices and a pinch of salt. Simmer with lid on over a low heat for 15 minutes. If it starts to get too thick just add a little more water. Serve over your cooked pasta.

You can add whatever herbs you like, I only have oregano and cumin in my pantry so I added them both.
